Menu week 26

Hey look, I made a menu! Last week was a nutritional trainwreck. Here’s hoping I can get on track for our few days before a weekend out of town.

Monday – mole chicken
Tuesday – grilled chicken w/ chipotle mashed sweet potatoes
Wednesday – caprese frittata
Thursday – hamburgers w/ tomato & guacamole
Friday – out

Breakfasts will be mostly yogurt and fruit. Lunches will be mostly chicken soup.

Menu week 24

My laptop’s power cable died last week and I hadn’t realized just how much I rely on having many multiple windows open when making my weekly menu until I couldn’t. I somehow managed to get it together using a combination of iPad and phone, but today is the first chance I’ve had to copy and paste it over here. So without further ado, here is this week’s menu:

Saturday – polish sausage & halushki (noodles served separately)
Sunday –  coconut flour pancake with meat sauce
Monday – shredded chicken taco salad
Tuesday –  garlic rosemary chicken drumsticks, broccoli
Wednesday – eggs baked in bell peppers, sweet potato
Thursday – out
Friday –  sauteed shrimp with cherry tomatoes, sweet potato fries

Breakfasts are mostly yogurt and fruit. Lunches are mostly chicken parmesan muffins with salad and a fried egg.

My menus are going to be pretty strictly low carb and lacking red meat for the next couple of weeks.

Week #23: Enjoy time with friends

Week 23 was last week and I am very late. I didn’t pursue any new goals, but it did turn out to be a week of food and drink with many different friends, which is good for the spirit.

I’m still trying to eat mostly paleo but with flexibility for social events. This week’s menu is pretty similar to a Whole 30 but with the inclusion of dairy.

Saturday – burgers, guacamole, tomato, sweet potato fries
Sunday –  Greek beef stew, greens
Monday –  crispy smashed chicken (from the Nom Nom Paleo iPad app), caprese salad
Tuesday –  sausages, cabbage, carrots
Wednesday –  pork carnitas taco salad
Thursday – out with friends, bringing a salad (I may try my hand at frying goat cheese)
Friday –  spicy garlic broccoli and shrimp over cauliflower rice

Breakfasts will be mostly greek yogurt and berries. Lunches will be mostly sweet potato, pork and greens hash.

Veggies week 23

Veggies week 23

We stayed up way too late playing Rock Band with friends last night so I wasn’t too optimistic that we would make it to the farmers market this morning, but we got up in time to get some breakfast with a few minutes to spare for veggies.

The haul:

cabbage, carrots, zucchini, yellow crookneck squash, cauliflower, broccoli, bag of braising greens (kale, chard, beet greens), boston butt, stew beef

Time to make a menu and use up all these tasty things.
