Whole 30 2013 – Day 20

Saturday breakfast:

Meat sauce heated in a tapas pan with a fried egg in it. This was awesome.

Lunch:

I packed some Whole 30 snacks for our drive, so we ate some sausages, nuts, and dates in the car. When we got to our destination our hosts invited us to Panera. I ordered this:

This was the Thai chicken salad. Aside from the dressing and the bleu cheese this was pretty good. I should maybe have had them left off.

Dinner:

Dinner was completely out of my hands. I met some family at an Applebees and had to do the best I could. I started with a caesar salad.

Then I ate the Bourbon Street chicken & shrimp. It was served on onions and mushrooms with a side of potatoes. Not too shabby.

Two thirds over!

Whole 30 2013 – Day 19

I went out of town this weekend (which presented its own challenges) and got a few days behind. Here goes the catching up!

Friday breakfast:

I spent the early morning at the mechanic and the entire rest of the day holed up at home in anticipation of the ice storm bearing down on us.

Lunch:

Homemade broccoli soup in front of the fireplace.

Dinner:

Salmon cakes, green beans, two small baked potatoes. I was not excited about this meal, but it did the trick.

Whole 30 2013 – Day 18

Today!

Breakfast:

I swallowed my pride this morning and made myself a mug macaroon for breakfast even though my aunt and uncle were still in my house. They had already eaten (or not eaten, as the case may be) and I was starved. The hungries are coming back — though they may be a direct result of the lazies.

Lunch:

Homemade meat sauce over a baked potato. I don’t think potatoes are technically Whole 30 compliant, but I have an 8 pound bag of them and they’re starting to grow eyes.

Snack:

I shared a bowl of date and almond stuff with the toddler.

Dinner:

Same as lunch.

Whole 30 2013 – Day 17

Wednesday!

Breakfast:

None. I didn’t eat before my weekly Panera trip, and I didn’t buy anything while I was there.

Quick salsa chicken with old guacamoleĀ and a quick date and almond dessert.

This was a weird day. My aunt and uncle came to visit in the afternoon and I became self-conscious about my food. I had absolutely nothing to offer to them, and I didn’t really want to dig into the end of my almonds or anything else without having enough for them. So I just kind of starved all day until a late dinner.

They took us out to dinner at one of our favorite Mexican restaurants. This is the chicken carnitas with a salad instead of the rice & beans. There was something in it that disagreed with me a tiny bit, but it wasn’t bad and it wasn’t obvious.

Whole 30 2013 – Day 16

Tuesday!

Breakfast:

This was the day that I was in the car off and on all day, so I had to take my meals while I could. That means applesauce for breakfast after picking up the toddler and taking her to storytime at two different libraries.

Lunch:

Two Applegate sausages and leftover mashed cauliflower.

Dinner:

A quick salsa chicken with guacamole after a crazy day.

Snack:

My husband and I have both been seriously craving junk food, so I found a recipe for chocolate paleo mug cake. It wasn’t exactly Whole 30 compliant, which I noticed a while later when it gave me a histamine reaction. Was it the honey or the vanilla extract (alcohol and sugar)? I don’t know. It wasn’t even delicious.

Whole 30 2013 – Day 15

My halfway point came and went and I was too caught up with my week to celebrate it with you! Here is what I ate:

Breakfast:

The end of the pork chops and cabbage.

The toddler and I shared some leftover roast pork.

Dinner:

Roast chicken with pureed vegetable “gravy”, green beans sauteed in ghee, sweet potato (I only ate half).

That was Monday. Yay halfway!

Whole 30 2013 – Day 14

Hey, I’m caught up to today with my food posts!

Breakfast:

None on Sundays, though I did splurge a bit and have some kolyva and a chocolate truffle after church.

Lunch:

My husband treated us to Chipotle after church today.

Dinner:

Tonight I made the world’s best pork roast with garlic mashed cauliflower and a salad on the side. We had a few blackberries and some applesauce afterward.

Whole 30 2013 – Day 13

Breakfast:

None.

Lunch:

Fish stew. I was going to have this for breakfast but that seemed too weird.

Snack:

I stocked up on these little lunchbag containers of unsweetened applesauce. They’re a pretty great snack.

Dinner:

This little dinner was a triumph of cooking at home over going out. I was exhausted and my husband and I both got home late, but I made this dinner anyway and it was pretty tasty. It’s a pork chop with a side of onions, peppers, and cabbage. We had some blackberries, too.

Then later I ate way too much chopped date stuff before bed.

Whole 30 2013 – Day 12

This has been the world’s longest week for no very good reason. Maybe it’s just the winter blahs. Here is yesterday’s food.

Breakfast:

Breakfast mug macaroon — in a mug this time. I ate this around noon.

Lunch:

I fried up the last of the turkey burger meat and served it with salsa on top. Marinara would have been better since the meat was seasoned with more Italian type spices, but it needed something and salsa was all I had.

Snack:

The toddler asked me for banana ice cream again so I made a batch with my last two frozen bananas. Then she didn’t eat any of hers. So I, an avowed banana hater, actually ate three bananas yesterday.

Dinner:

Dinner was an improvised fish curry stew which isn’t tremendously delicious but is somehow very filling. You will be seeing this again.

Whole 30 2013 – Day 11

Leftovers night used up all of the food I was going to eat for lunches this week, so I had to wing it yesterday.

Mel’s chocolate chili over mashed butternut squash before a trip to the natural history museum with the toddler.

I was so hungry after my busy morning that I just ate the end of the chili straight out of the container.

Snack:

The toddler and I shared some almonds, coconut flakes, and herbal tea in the afternoon. It was a dark, cold, rainy day and we medicated with snacks. I desperately wanted to bake cookies or something just to have something to do, but I stayed strong.

Dinner:

Dinner was my own concoction of turkey burgers on roasted bell pepper halves with a side salad. They were pretty good!
